Cauliflower Fritters with Yogurt Sauce

  • In a bowl, add the finely chopped onions, eggs, cumin, pepper, cinnamon and salt. Mix together with a hand whisk.
  • Add the flour and whisk until it becomes a thick mixture.
  • To prepare the cauliflower, remove any leaves with a small knife and cut into small florets.
  • Place florets and leaves in a bowl. Add 1 tablespoon of flour over the cauliflower to help the batter stick to the florets better.
  • Pour the oil in a frying pan and heat.
  • When it is very hot, carefully add a generous amount of the cauliflower mixture (3 tablespoons for each fritter).
  • Dip them in the batter and add to the pan.
  • Be very careful with the hot oil! Keep the fritters apart with a spatula and careful not to crowd them in the pan.
  • Keep your eye on the heat so that they don’t burn.
  • They need about 3-4 minutes on each side.
  • Remove from pan and allow to drain on paper towels.
  • Combine all of the ingredients for the sauce in a bowl. Mix until smooth.
  • Taste it to make sure it has an intense, fresh, lemony flavor and season with salt and pepper.
  • Set aside at room temperature or refrigerate for at least 1 hour.
  • Serve with yogurt sauce on the side.
